When it comes to the queen of cheap vegan meals, vegan spaghetti remains the number one pick in our household during travel. Spaghetti is quick and easy to make, it’s tasty, and a crowd pleaser after an fun-filled day of exploring a beautiful new city.
Take a stroll down any grocery store aisle, in any country, and all the ingredients will be right there… screaming, “Buy me!” Simple yet versatile, there are many creative ways to prepare this dish.
Sprinkle in seasonal or new vegetables you’ve stumbled on in the country you’re visiting. Toss in some herbs and seasoning. If you’re feeling spicy, add some heat with jalapenos or sub out tomato sauce for another sauce of choice. It’s your scrumptious vegan dish, so make it how you choose.
Below, you’ll find vegan pasta recipes Evan and I love to cook in any Airbnb. However, when we’re not feeling spaghetti, we’ll opt for one of these easy vegan meals instead.
Keep in mind, all the dishes listed below require 9 ingredients (minus your pasta noodles) or less, making them extremely easy to cook when traveling. Sometimes, kitchens don’t have all the necessary tools (i.e. pots, pans, oils, seasonings), so less is more when it comes to travel cooking.
Classic vegan spaghetti bolognese
If you’re craving a hearty bowl of bolognese, this vegan spaghetti sauce is a quick fix to satisfy your vegan bolognese woes. It’s uses a combination of walnuts and red lentils to create a meaty texture. Feel free to omit the walnuts and sub for another nut like almonds if you prefer. Keep in mind this will change the texture some.
Ingredients:
- Onions
- Garlic
- Crushed tomatoes or tomato sauce
- Italian seasoning
- Salt and pepper
- Red lentils
- Red wine (can omit if you want, but adds depth of flavor)
- Olive oil
- Veggie broth (or you can use water with a veggie bouillon cube)
- Walnuts (for texture)
Directions:
- Chop and saute onions in olive oil. Once they start to brown add in the garlic.
- After both the veggies are browned, add in the Italian seasoning (can use oregano instead), salt and pepper.
- If you using red wine, pour it in the pan and let it simmer for about 3-4 minutes to burn off the alcohol smell.
- Next you’ll want to add the broth (or water with a bouillon cube), red lentils, and walnuts to the pan. Let the concoction come to a boil, then turn down the heat to let it simmer.
- Add in the tomato sauce or crushed tomatoes and let everything cook for about 20 – 25 minutes until the lentils are soft.
- Top it on your spaghetti noodles and finish with some crushed red pepper for a spicy twist.
Tip: To speed up the cooking time, quick-soak your red lentils for at least an hour before cooking. If you prefer to use another lentil, try black or yellow lentils, as these tend to cook faster than green lentils in my experience.

Mushroom baked vegan pasta
Baked vegan pasta is another one of our favorite hearty and easy vegan meals to prepare on the road. What’s great about a vegan pasta bake is you don’t have to boil the noodles if you don’t want to. Instead, throw the noodles in with the sauce to cook. This saves cook time, prep time and dishes! It’s the ultimate one pot pasta for vegans.
Feel free to use the recipe above to make a baked pasta dish. Then add in vegan cheese and vegan cream cheese to get the ooey gooey sensation.
If you’re craving a different recipe and want a creamy pasta bake try this creamy mushroom and spinach bake. For a veggie pesto pasta bake, omit the tomato sauce, and add in vegan pesto instead.
Ingredients:
- Onions
- Garlic
- Tomato sauce
- Mushrooms
- Salt and pepper
- Olive oil
- Spinach
- Oregano
- Vegan cheese
Directions:
- Chop all the veggies, then preheat the oven to 400 degrees Fahrenheit.
- Grab a large baking dish and add all of the ingredients into the pan.
- Mix thoroughly and make sure your noodles are covered generously.
- If you want the dish extra creamy, add in plain vegan cream cheese or plan vegan yogurt, then mix again with an extra handful of cheese.
- Top with cheese, then place foil over the pan, and let it bake for 40 – 50 minutes.
- Let it cool before serving and sprinkle crushed red pepper over the bake.
Tip: Soak the noodles in warm salt water until you’re ready to build your bake and then toss it in the oven.
Asian inspired vegan spaghetti stir-fry
Noodles are extremely versatile and can make the most incredible drool-worth dishes. If you’re craving a aromatic twist with your veggie pasta, try Asian-inspired stir-fried noodles. It’s an easy and quick vegan dinner that you can create anywhere around the globe. Shop local to load up on seasonal veggies to bring your dish to life.
Below you’ll find the typical ingredients Evan and I will use for our healthy vegan meals. Keep in mind, we’ll rotate veggies in this dish. For instance, Ukraine has amazing cabbage, so we incorporated this into our dishes. While in Santiago de Compostela, I focused cooking with various varieties of mushrooms since they’re native there.
Ingredients:
- Bell pepper
- Garlic
- Cabbage (can use zucchini, broccoli, onions,
- Ginger
- Mushrooms
- Green onions
- Olive oil
- Gluten-free soy sauce (tamari sauce)
- Crushed red pepper
Directions:
- Chop all the veggies and create the sauce. The sauce will be a mixture of gluten-free soy sauce, red pepper flakes and sesame oil (if you have any). Mix these in a bowl separately before adding them at the end.
- In a large skillet bring add olive oil and saute the cabbage, mushrooms, and bell pepper.
- Once the veggies are softened add in the green onions, fresh ginger, garlic, and red pepper flakes. Cook for 1 minute.
- Toss in noodles (we’ll use gluten-free spaghetti noodles or rice noodles, but feel free to use any noodle you’re craving), then add in the sauce.
- Garnish with extra green onions (optional to add crushed peanuts) and enjoy!
Tip: To add more depth of flavor try adding sesame oil to your stir-fry. When I’m cooking in California, this is a staple ingredient I use which adds a subtle nutty aroma. However, if you can’t find this ingredient abroad, if perfectly okay to omit it.
